Award-Winning Chocolate Chip Pumpkin Bread
3 cups sugar
1 cup vegetable oil (can also use mild-tasting olive oil or melted butter)
16 oz. can unsweetened pumpkin
3 1/2 cups flour
2 teaspoons salt
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon nutmeg
1 teaspoon cinnamon
2/3 cup water
1-2 cups chocolate chips (according to taste)
Preheat over to 350 degrees. Spray 9×13 pan (or large cookie sheet or muffin tins) with nonstick spray. Stir together sugar, oil, eggs, and pumpkin. Combine dry ingredients in separate bowl. Blend dry ingredients and water into wet mixture, alternating. Add chocolate chips in desired amount. Pour into pan. Bake for 30-40 minutes (or 20-25 minutes for cookie sheet or muffin tins), or as long as necessary until a toothpick comes out clean.
